Where your food comes from

We care about what you eat. Cooking wholesome foods and following the seasons isn't a trend at the Milford Oyster House. It is what we have been doing for more than a decade, and we continue to be dedicated to presenting you the best possible food, prepared to order to the best of our abilities & served with grace.

We purchase top-quality fish from reputable vendors. Our oysters are sustainably farmed in open domestic water, where they eat their natural diet of plankton. Every piece of fish on your plate is wild — living & swimming in the big, blue sea without corn-based feed or antibiotics. Not only are you what you eat, but, to quote Michael Pollan, you are what what you eat eats.

Our salad dressings are all made with heart-healthy olive oil & other natural ingredients. If you check the ingredient list on our heavy cream you will find but one ingredient: heavy cream. All of our desserts are made on premises from scratch without any mono-this or di-that.

Local when possible is another of our mantras. All the tomatoes used in our sauces & soups are Jersey Fresh. How do we do that in winter? By using a canned product that is the result of a cooperative organized by Rutgers to brand the goodness that is a Jersey tomato.

We get cheese and beef from Boblink Farms in Alexandria Township, and coffee roasted by Homestead Coffee Roasters of Upper Black Eddy. Almost all of our eggs come from Twin Bulls Farm in Baptistown, along with seasonal produce including heirloom tomatoes. Our asparagus comes from Little York. In season, we get scallops and flounder from Viking Village in Barnegat Light, and fruit from Phillips Farms in Holland Township.

We carry wines from New Jersey's only organic vineyard, Villa Milagro, six miles up the Delaware River from us in Finesville; from Alba Vineyard, also in Finesville; and from Sand Castle Winery, just across the Delaware River from us and a bit downstream in Erwinna, Pa.

And Chef Ed grows his own rhubarb and hot peppers and some herbs.

What we can't get locally we still get with care. For example, all our garlic comes from Gilroy, California, not from China.

Food safety? We take it very seriously. Our kitchen is one of the few in Hunterdon County to receive a gold seal for cleanliness from the Hunterdon County Department of Health. All of the cooking staff is ServSafe certified.
